Lemon Chicken with Cajun Spiced Sweet Potatoes

Roast chicken is one of my all time favourite dishes to cook at home. You can’t beat it! 

I only recently discovered how to make the chicken taste even better and much more juicier, by incorporating lemon into it. It also smells incredible too!

This dish is so simple and easy, making it perfect on a Sunday, when you don’t want to spend your lazy day slaving away in the kitchen. 

Ingredients (serves 2 people):

1 whole organic free range chicken

1 lemon

sea salt

olive oil

1 whole garlic separated into cloves 

3 sweet potatoes

Cajun spice mix

1 pot of tzatziki dip

Preheat the oven to 190oc. 

Begin by rubbing olive oil all over the chicken, and sprinkling with a generous amount of sea salt. 

Cut the lemon in half  and push them inside the chicken, along with crushed garlic gloves. Place the chicken onto a baking tray and into the oven for 1 hour (this isn’t the full amount of cooking time, you still need to add the sweet potatoes later and cook them both for an additional 30 minutes). 

Whilst the chicken’s cooking away nicely in the oven, you can prepare the sweet potato wedges ready to put in later. 

Peel the sweet potatoes and cut them into wedges before placing them into a baking tray. Drizzle with olive oil and toss them around in it. Then add the Cajun spice mix and make sure they’re all coated. 

Every 20 minutes, take the chicken out and baste it with the lemony garlic juices that will be surrounding it in the baking tray. This will help to keep it moist and to not dry out. 

After the chicken has been cooking for 1 hour, add the sweet potatoes into the oven and set a timer for 20-25 minutes, depending on how you like your potatoes cooked. I like mine extra soft so 25 minutes is perfect for me. 

Whilst the chicken and sweet potatoes are on their final leg in the oven, now is a good time to whip up a quick salad to accompany them. 

Once your timer goes off, everything should be cooked to perfection. You’ll know if the chicken is fully cooked if the juices run clear and the chicken isn’t pink.

Place the chicken onto a carving board and take the lemon slices and garlic out. Squeeze the remaining lemon juice over the chicken and rub the garlic over the skin as this will add a last hit of flavour just before serving! 

The finished product…

Serve with tzatziki dip, which in my opinion goes perfectly with Cajun sweet potatoes and chicken. You can make it yourself but who can really be bothered when M&S do such a yummy ready prepared version ;). 

The perfect dish for a family meal, a BBQ with friends or to really impress a special someone with your cooking skills without actually having to do much cooking! And it’s healthy. What more could you want!
